  • Use pulsing action of food processor to process 1/2 cup nuts 1 min. or until finely ground. Add dressings, coconut milk and Sriracha sauce; process 1 min. or until well blended. Reserve for later use.
  • Cut potatoes into thin curled strips using medium-size blade of vegetable spiralizer.
  • Cook chicken in large nonstick skillet on medium heat 8 to 10 min. or until done, stirring occasionally. Remove chicken from skillet.
  • Add potatoes to skillet along with the broccoli and water; stir. Cook 3 to 5 min. or until potatoes are tender, stirring frequently. Add dressing mixture and chicken; mix lightly. Cook and stir 1 to 2 min. or until heated through. Remove from heat.
  • Sprinkle with cilantro and remaining nuts.

Special Equipment Needed


If you don't have a spiralizer, you can instead use a vegetable peeler to make the sweet potato "noodles." Starting at the top of the peeled sweet potato, pull the vegetable peeler down the potato into lengthwise strips.
