  • Heat oil in large nonstick skillet on medium heat. Add chicken; cook 4 min. on each side or until evenly browned on both sides. Meanwhile, combine all remaining ingredients except rice.
  • Spoon vegetable mixture over chicken; cover. Cook 7 min. or until chicken is done (165ºF).
  • Serve over rice.
