  • Heat oven to 400°F.
  • Spread chicken with 2 Tbsp. marmalade. Empty coating mix into shallow dish. Add chicken; turn to evenly coat both sides of each breast. Place in 13x9-inch baking dish.
  • Bake 25 min. or until chicken is done (165ºF).
  • Mix dressing and remaining marmalade. Add to spinach; toss to coat. Place on 4 serving plates. Top spinach on each plate with 1 sliced chicken breast and 1/4 of the oranges.

Y-U-M-M-Y!!! we eat a ton of chicken so i'm always looking for new ideas. this is the best recipe i've come across in a long time. the marmalade & italian dressing are a perfect match with the fresh spinach. my husband raved about it through the entire meal and said he could eat it every night. that was on a tuesday and he asked for it again that saturday. this is definitely a household recipe for us!

Rated 5 out of 5 by from I loved this chicken. I loved this chicken. I am a big orange flavor fan, so this did the trick. I thought it was easy and delicious. We had the spinach salad, but I mixed the orange marmalade with Light Done Right Olive Oil Red Wine Vinaigarette dressing instead. It was wonderful. If you want a quick meal that doesn't taste quick, this is the one!!

I have since made it numerous times...its a definite repeat recipe!! I don't measure the amount of orange marmalade for coating, just use whats needed, and I make the dressing to taste, which I have tossed with lettuce as well as spinach.

Rated 5 out of 5 by from WOW! WOW!!! This was FANTASTIC!!! My whole family LOVED it!! Even my 2 and 6 year old kids scarfed it down- all of it!! I did squeeze some of the oranges on the chicken before baking, and added a tiny bit of orange juice to the dressing- it was GREAT!! This will probably be a frequent in our house!!

GREAT!! with the green I put onions strips and grape tomatoes cut in half for color(TASTE WAS OUT OF THIS WORLD)put the bed down chicken on top with corn on cob and baked potatoe-looked like a PICTURE! not plain chicken anymore-THANK YOU,I'm doing his also on porl loin chops.

Not great for presentation, and you lose that flavor when that happens. I would make it again, but maybe dip the chicken in corn starch and egg batter a couple times before adding the crumbs.

You definitely have to get a lot of marmalade on the chicken but my coating sticks great. I added some sauted raman noodles and they were a great addition of crunch!

My mom and aunts request me to make if for their birthdays and special occasions instead of going out to eat! This is defentally a family favorite!!
