  • Cook pasta as directed on package, omitting salt.
  • Meanwhile, melt 2 Tbsp. butter in large skillet on medium-high heat. Add shrimp; cook and stir 3 min. or until shrimp turn pink. Remove shrimp from skillet; cover to keep warm.
  • Add remaining ingredients, including remaining butter, to skillet; cook on low heat 5 min. or until cream cheese is completely melted and mixture is well blended, stirring constantly with whisk. Stir in shrimp.
  • Drain pasta; place in large bowl. Add shrimp mixture; mix lightly.

The chipotle pepper is actually a jalapeño pepper that has been dried and smoked. Chipotles can be found dried, pickled and canned in adobo sauce. For all-family appeal, try adding small amounts of the chopped chipotle peppers to the Alfredo sauce since chipotle peppers can be rather spicy.


For a stronger or milder flavor, use more or less chipotle peppers to taste.

How to Purchase and Store Raw Shrimp

Fresh shrimp should be firm, moist and translucent and should smell like the sea. Avoid those with black spots and any trace of ammonia odor.
