  • Heat oven to 350°F.
  • Cook pasta as directed on package, omitting salt. Meanwhile, crumble sausage into large deep skillet; cook on medium-high heat until evenly browned, stirring occasionally. Drain; return sausage to skillet. Stir in vegetables and pizza sauce; cook 5 to 6 min. or until vegetables are crisp-tender, stirring occasionally.
  • Drain pasta. Add to sausage mixture along with the VELVEETA; mix lightly. Spoon into 13x9-inch baking dish sprayed with cooking spray; sprinkle with Parmesan.
  • Bake 15 to 20 min. or until heated through.

Prepare recipe as directed, substituting lean ground beef for the sausage, and 1 cup each shredded carrots and zucchini for the 3 cups sliced zucchini. Also, try using a fun pasta shape, such as wagon wheels.

VELVEETA Sausage and Rice Casserole

Omit pasta. Prepare recipe as directed, adding 1-1/2 cups uncooked instant white rice and 1-1/2 cups water to the sausage mixture along with the VELVEETA. Increase the baking time to 35 to 40 min. or until rice is tender and casserole is heated through. Makes 8 servings.

Variation

Prepare with extra-lean ground beef and 2% Milk VELVEETA.

Rated 5 out of 5 by from this was very good! this was very good! I added some red onion and used 1/2 cup of red and 1/2 cup green peppers. I also used some italian blend shredded cheese on top, along with the parmesan. Turned out awesome! Veggies were perfect- not too crisp and not soggy. Will definately make again. The only negative is that the velveeta is very heavy- it is very filling.

Rated 4 out of 5 by from it has been a long time since all 4 of my kids asked for 2nd and then 3rds and STILL cleaned their... it has been a long time since all 4 of my kids asked for 2nd and then 3rds and STILL cleaned their plate. this was good. i did modify it because i live in the middle of nowhere and didnt have all the ingred. i used hamburger meat and did not use zuccini or pepper. i used onion. i will make it like the recipe next time. family LOVED it.

Rated 4 out of 5 by from I made this for my husband, 2 of his buddies, myself, and our 2 year old. I made this for my husband, 2 of his buddies, myself, and our 2 year old. I ended up having to make something else for me and my son becuase the guys ate it all! That means its a keeper! I did make a change and used the full 15oz can of pizza sauce and I only used 2 of the zuccini but the little bite I got was yummy!

I would definately make 2-2 1/2 cups pasta...there was too much meat I thought in comparison to pasta. I followed everything else and it was yummy! The italian sausage added a kick of flavor!

Rated 5 out of 5 by from I have to say I did alter this slightly. I have to say I did alter this slightly. I used ground beef, I don't care for It. sausage. I added onions to the zucchini and pepper step for added veggies and I used 1/2 jar of spaghetti sauces. I was out of pizza sauce. My husband said it is the best thing I have ever made.

Rated 5 out of 5 by from This recipe was wonderful! This recipe was wonderful! I added in some squash I had on hand in addition to the zucchini, as well as reducing the amount of Velveeta. My boyfriend thought I had made an intricate roasted red pepper sauce and was floored when I told him it was Velveeta and pizza sauce.

I dont normally like zucchini but mixed with all the flavors it adds another great texture to the dish! My whole family enjoyed it, I also topped it w/mozzarella cheese instead of parmesan because I have picky eaters.

If I do make this again, I would use mozzarella cheese, or no cheese. All you could taste was the very strong taste of velveeta. It totally overpowered all the other flavors.
